Apricot salad dressing

ingredients
¼ cup olive oil
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 whole fresh apricot, pit removed
1 teaspoon dijon mustard
7 drops stevia
¼ teaspoon celtic sea salt


directions

  1. Place all ingredients in a Vita-Mix (or other high speed blender) and blend on highest setting until smooth
  2. Serve over fresh garden greens
  3. Enjoy!

    I LOVED this dressing! I made it the other day for my appetizer (salad) and it was delicious! I put the dressing on some mixed green and these seasoned chickpeas from Tasty Bite and the flavors went great together! I’ll definitely be making this dressing very often.
